PERSIA intends to develop innovative and environmentally sustainable packaging solutions, using new molecules of natural origin such as antimicrobial peptides (AMP), to activate materials used to preserve and distribute meat and dairy products. The antimicrobial effect of polymeric materials, functionalized with single AMPs or with their suitably selected mixtures against the deterioration of food and associated pathogenic bacteria, represents a valid tool to increase the shelf life and safety of these products, reducing and preventing food waste. In this context PERSIA proposes the creation of an active packaging form (AP) through an innovative and eco-sustainable approach in which antimicrobial agents of natural origin are used to coat the surface of polymeric materials in order to control the growth and proliferation of unwanted microorganisms in the foods. The advantage of the technological solution that PERSIA intends to develop lies precisely in the peculiar chemical-physical and structural characteristics of the AMPs already designed.
